Ingredients:
- 2 15 oz. cans black beans, rinsed and drained
- 1 sweet red pepper cored, seeded, chopped
- 2 cups finely chopped cabbage
- 4 green onions chopped
- 4 oz. feta cheese, crumbled
- 1/4 cup chopped parsley
- 1 clove garlic, minced
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- Combine all ingredients and mix. Cover and refrigerate until well-chilled. Makes 8 1-cup servings.
